Honey Muffins

I haven't posted a recipe in a while, and the kids and I have been enjoying these muffins for breakfast. No sugar, just sweetened with applesauce and honey, this muffin is versatile enough that you can really have fun with it.

But a word of warning: these aren't sweet cakes. If you, like my sister, are used to muffins you buy at the store in a bag or box, you will be disappointed. My sister, who is pregnant so we'll blame the hormones, made a sour face when she tried these. And asked why they weren't sweet. My Mom then, agreeing with her that the blueberry ones really aren't sweet, offered her the streusel topping, saying you'll like this one better. The streusel topping is a little more sweet.
But you might enjoy these! I love how my kids pass these out to everyone like they are the best things ever. Because, they really do like them. Sometimes I forget how differently we do things. Paper towel? Oh sorry, here's a cloth napkin! Antibacterial soap? Sorry! Soda? How about some milk or water? Or we have coffee! Just milk though, no cream or sugar.
The kids and I still eat sugar, but we don't have any white sugar in our house. So if we want something sweet, and we aren't at my Mama's house, we have to make something with either honey, maple syrup, or raw sugar. It does take some adjustments, and our palates have definitely changed.
Anyway, what's this post about? Oh yes, muffins. This recipe makes 24 muffins. We make 12 blueberry and 12 with a streusel topping. They are really good with some butter, and the streusel topping does make them taste sweeter. We use our frozen blueberries from last summer. I'm so excited about putting up food again this summer!
It's an easy recipe! Stir together the dry ingredients and form a well for the wet. You could have a little fun mixing the flour and oatmeal. If I wanted to wash more dishes, I would grind up some of the oatmeal to replace some of the flour. But I don't like washing dishes. You could also mix up the flours if you wanted.

Beat the eggs, and then add the rest of the wet ingredients to the eggs.

Pour the wet ingredients into the dry ingredients and stir just until they are combined.
I put the ones for the streusel topping into the muffin tin first, and then stir in some blueberries (I don't measure the blueberries, I just pour them in until it feels right) for the rest. I use these cupcake linersbecause they are all natural. (Affiliate link! But I would check your grocery store, that's where I found mine. Who needs 1440 cupcake liners?) Put the streusel topping on, and throw them in the oven.
It takes about 17-18 minutes at 400 degrees, and then they are done!

Dry ingredients:
4 cups flour
1/2 cup oatmeal
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Stir together, and form a well.

Wet ingredients:
2 eggs, slightly beaten
1 1/2 cups applesauce
1 cup milk
1/2 cup honey
2 tablespoons oil (coconut oil, olive oil, or butter. I like butter.)
Whisk together, pour into dry ingredients.

Stir them together, but don't over mix. Scoop into prepared muffin tins. Bake at 400 degrees for 17-18 minutes.

Streusel Topping:
3 tablespoons flour
3 tablespoons raw sugar
1/4 teaspoon cinnamon
2 tablespoons butter

Cut in butter until it's crumbly, sprinkle on top of muffins before baking.
