Just a quick recipe today! If you have a bunch of egg yolks left over from making a Strawberry Chamomile cake, you might like to try these:
1 cup of butter
1 cup of sugar (I use evaporated cane juice)
6 egg yolks
1 teaspoon of lemon extract
2 1/4 cups of all-purpose flour
1 teaspoon of baking soda
1/2 teaspoon of salt
1 cup of chopped strawberries
Preheat oven to 375. Cream the butter and sugar until light and fluffy. Add the eggs yolks and mix until incorporated. Add the lemon extract and mix again. In a separate bowl, combine the flour, baking soda, and salt. Add flour mixture to butter mixture slowly, mixing while you add. Stir in the strawberries. Drop spoonfuls on an ungreased baking sheet. Bake for 11-12 minutes. Makes about 2 dozen cookies.
