Peppers, Cheese, and Bacon!

This particular night, we were out grilling in front of the garage. We like sitting over there, and hanging out with our goats. Goats are awesome. Anyway, Jeremy was grilling a london broil steak, some corn on the corn, and the pepper poppers. We love these poppers, we eat them all summer long!

They are easy, and versatile. (Which is one of the most important aspects of a recipe to me. If I can't change it up a little bit, I'm probably not going to make it because of some random ingredient I don't have in my kitchen when I need it.)  Jeremy wraps a piece of a pepper and a piece of cheese in some bacon (sometimes half a slice of bacon, sometimes a whole slice, it depends on how many he's doing), and grills it until the bacon is cooked. Then he usually brushes on some barbecue sauce. He's also sprinkled them with different seasonings, but we really love it with the sauce. He lets the sauce cook on the bacon until it gets sticky, and then pulls them off the grill to start eating.
We have had this recipe many different ways, each time it's just so good! We love it with jalapenos (these can be really spicy!), banana peppers, bell peppers, cheddar cheese, cream cheese (my favorite!), Monterrey jack cheese, and pepper jack cheese. Any kind of barbecue sauce works. Thin cut bacon does usually work best, although if you want the thick cut, it's easy enough to stick a toothpick in it to keep it together.
The basic recipe is: wrap a pepper and some cheese in bacon, grill. Slather with barbecue sauce. Enjoy!

And yep, Jeremy put those together on the back of his truck. We live in the country, y'all. We picked our peppers from our garden and didn't have to worry about washing them because we just let them grow. A London broil steak and corn on the cob from the Farmer's Market go perfectly with these poppers. It's a perfect summer-time recipe.
